One of the signings will introduce Popping Yolk Cafe to Northern California. The single-unit franchise was purchased by Alan and Eileen Dichoso for Elk Grove.

“This expansion marks an important milestone as we enter a brand new market,” said Jason Tsai, founder and CEO of Popping Yolk Cafe. “Most of our growth to date has been concentrated in Southern California, so our Elk Grove location represents a significant step.”

The second agreement was signed by Javier and Rose Zamora, alongside their children Ethan Zamora, Nathan Zamora, and Tiffany Westmoreland, for a single unit in Buena Park, California.

“I’m also particularly excited about a market like Buena Park. It has a strong local community, a diverse customer base, and attracts both families and visitors throughout the year,” said Tsai. “Our brand has always resonated well with both travelers and local residents, so the opportunity to introduce Popping Yolk Cafe to even more guests from different backgrounds is something I truly look forward to.”

The latest expansion comes as Popping Yolk Cafe continues building momentum across California. Earlier this year, the company opened a new corporate-owned location on Melrose Avenue in West Hollywood, known as one of Los Angeles’ most competitive restaurant corridors. Since its launch, the location has quickly established a loyal customer following, providing additional evidence that the concept can resonate in both established and highly competitive markets, says Tsai.

Following the success of the Melrose location, the company is now developing a larger flagship location on Melrose Avenue that will “represent the next evolution of the brand” and eventually replace its current Melrose restaurant.

“Our experience with our Melrose store has reinforced our belief that our concept can thrive in a wide variety of markets,” Tsai said. “Whether it’s a suburban neighborhood, a family-oriented community, or a highly competitive and trend-driven urban district, our food, hospitality, and overall guest experience have the ability to stand out.”
